ICA WILL BE CLOSED ON THURSDAY AND FRIDAY TO CELEBRATE THE HOLIDAY.

Here in Allentown, PA, it would not be Thanksgiving without some PA Dutch potato filling. This recipe has been in our family for generations. It is wholesome and very simple!

PA Dutch Potato Filling

2 pounds potatoes
2 TB butter
1 cup chopped onions
2 celery with the leaves, chopped
4 slices  stale bread, cubed
1 egg
3/4 cup of milk
salt and pepper

Preheat oven at 325. Cook potatoes in salted water until tender and drain. Melt butter in small saute pan, add onion and celery. Saute for about 5 minutes. Add to drained potatoes, along with bread and egg. Blend with mixer. Add milk gradually. Add more or less depending on consistency you would like. Transfer to baking dish and bake for 30 minutes, covered. Taste and season with salt and pepper.

Pretty simple, right?  ENJOY!
